Next, marvel at the Aposelemis Dam, home to the sunken village of Sfendili and its vibrant wetland birds. The sight of the partially submerged village is a haunting reminder of the past, while the surrounding wetlands are a haven for birdwatchers. From here, the tour ascends through the scenic Embassa Gorge, where you will have the chance to pick local herbs and participate in a hands-on cooking class with local chefs.

On the Lassithi Plateau, you will craft your own ceramics, mingle with locals, and unwind at a quaint café. The plateau is known for its fertile soil and traditional windmills.
